CRISPY FRIED CHICKEN

Method

01. Combine flour and all of the seasonings in a bowl.

02. Cut the chicken into pieces (breasts, thighs, legs, and wings).

03. Whisk the buttermilk and beaten egg together in a large bowl.

04. Place the chicken pieces in the buttermilk mixture and soak the chicken for 30 minutes.

05. Place a wire rack on top of a baking sheet.

06. Remove the chicken from the buttermilk and shake off excess.

07. Put each chicken piece into the flour mixture, turn to fully coat, then shake off excess flour.

08. Place the breaded chicken onto a wire rack over a baking sheet.

09. Let the breaded chicken rest for 15 minutes before frying.

10. Heat FRYTOL vegetable oil to 350 degrees in a deep fryer or Dutch oven.

11. Fry the chicken in batches until done. Breasts and thighs take about 15 minutes to cook. Wings and drumsticks take about 12 minutes to cook.

12. Drain the fried chicken on a clean wire cooling rack on top of a baking sheet.

01. Frytol 100% pure vegetable oil

02. 4 cups all-purpose flour, divided

03. 2 tbsp garlic salt

04. 1 tbsp paprika

05. 1 tbsp dry mustard

06. 3 tsp black pepper

07. 1⁄2 tbsp thyme

08. 1⁄2 tbsp basil

09. 1 tbsp ground ginger

10. 3 tbsp white pepper

11. 2-1⁄2 tsp poultry seasoning

12. 2 large eggs

13. 1-1⁄2 cups water

14. 1 tsp salt

15. 2 broiler/fryer chickens (3-1⁄2 to 4 pounds each
